Portuguese Cornbread

Portuguese Cornbread is very different than American cornbread. It is made with a combination of white corn flour and wheat flour. It is chewy on the inside with a prominent crust great for eating with hearty stews. This bread gets a new life when older slices are pan fried in olive oil and served with Ervilhas com Ovos Escalfados – a traditional favorite made with peas, eggs and linguiça.
