Known historically as 'Zhong Shui Jiao,' Zhong Dumplings are a traditional snack from Chengdu city in Sichuan Province and are a part of Chengdu cuisine. This dish originated in the nineteenth year of the Guangxu period (1893). Initially, because the restaurant was located in Litchi Alley and the seasoning was heavily reliant on red chili oil, it was also referred to as 'Litchi Alley Red Oil Dumplings.' Zhong Dumplings exclusively use pork filling. When served, they are drizzled with a specially prepared red chili oil.
