A giant portobello mushroom basted with garlic butter and stuffed with artichoke hearts, feta, sun dried tomatoes and spinach. Topped with mozzarella cheese, baked and served on a bed of spring mix tossed in herb vinaigrette dressing. Drizzled with a balsamic glaze.
