Hot And Sour Beef

This hot and sour taste is probably the most celebrated sauce of the Hunanese. It really contains only a small amount of souring agent (vinegar). Lightly saute beef in oil and removed from wok, add ginger, garlic, carrots, onions and stir lightly until flavors are blended. Add wine, hot and sour sauce, and return beef to the wok and toss lightly.
