Place boneless diced chicken, ginger and garlic in hot wok with a small amount of oil. Toss in wok until half done. Add onion, bamboo shoots, hot garlic sauce, and water chestnuts and toss lightly. To this mixture add peanuts that have been separately deep-fried; toss in wok a few minutes until done, and you have a delicious dish.
